Simple Dinners: Meatloaf and Sides

As Spring activities begin and the days get longer and nicer, who wants to spend a lot of time in the kitchen?  Today, we will be having Meatloaf, mashed potatoes, macaroni and cheese, green beans and grapes. I know that sounds like a lot, but Lil man does not eat any form of a potato unless it is a french fry or potato chip and does not care for green beans either.  Since we have baseball practice tonight I tend to reach for help from Hormel, Bob Evans or Simply Potatoes for sides.  They have a number of choices and it helps me get a healthy meal on the table for my family.fullsizeoutput_3a8d

The meatloaf I make is pretty simple.  This time around I made 2 smaller loaves–one for tonight and one goes in the freezer.  The ingredients are few: 2 pounds of ground beef, 1 cup of Quaker Oats (I used rolled oats), 1 cup of Pace Mild Salsa, 1 egg and salt and pepper.  (Full recipe below)fullsizeoutput_3a7b

After whipping the egg, I combined all the ingredients in a large bowl.  Once combined, I made 2 loaves.  I always use parchment paper for anything that goes on a cookie sheet.  This will help you with clean up time.  Bake at 350* for 1 hour.


While the meatloaf is cooking, I boil my green beans.  When the farmers market opens up, I will cook fresh beans.  I add some garlic, fresh onion, salt, pepper, a bit of Olive Oil and a little bit of bacon or ham for flavor to my beans.


About 10 minutes before the meatloaf is done, I will warm up the mac and cheese and the mashed potatoes. Hope you enjoy!


2 lbs ground beef

1c salsa

1c Quaker Oats

1 egg whipped

salt and pepper

Preheat oven to 350*. Combine all the ingredients. Make into one large loaf or 2 smaller loaves.  Bake on a lined cookie sheet for 1 hour.
