Welcome back to Much Loved Chaos! Thank you for taking the time to visit. We are enjoying sunny days again here in NC and with that a little bit warmer temperatures. Even with those warmer temps, we are still in the middle of winter so, I thought I would share another Much Loved Recipe that I find pretty simple to prepare and very healthy. This week we will be making Vegetable Beef Chowder. This is similar to a vegetable soup but, a little heartier.
So good! So simple! So healthy! I even take it a step further and double the recipe. This works great for our family since not one of us wants a cold lunch or dinner in the winter. You can also serve this with tortilla chips, crackers or a slice of your favorite bread on the side.
Vegetable Beef Chowder
1/2 lb ground beef
1 can diced tomatoes or stewed tomatoes
8oz can tomato sauce
2 cups of water
1 12oz pkg of frozen mixed vegetables
1/2 envelope dry onion soup mix
1 tsp sugar
Brown the ground beef and drain off excess grease.
Stir in tomatoes, tomato sauce, water, vegetables, soup mix and sugar.
Bring to a boil and simmer for 30 minutes. Makes 6 cups/servings.
